12-gauge wrought iron is the standard here, thicker than the 14 and 16-gauge most iron doors are built from. That extra steel is what resists forced entry and keeps a heavy door from sagging on its hinges over the years.

Ballistic protection is measured on the UL 752 scale, which runs from Level 1 (handgun rounds) up to Level 8 (rifle fire). Where a door lands on that scale depends on the steel thickness and the glass laminate spec.

Yes, with a thermal break. Iron conducts temperature, so an untreated iron door in a cold climate invites drafts and condensation around the frame.
